My grandmother made this brown bread every two days for her family. When I was 8 years old, she taught me how to make it. She made it by touch - a hand full of this and a hand full of that - it took me ages to actually get weights from her… but I did and here it is.

COOK TIME
35-40 mins
SERVES
6-8
- 300g brown flour
- 150g self-raising white flour
- 1 teaspoon salt
- 680ml sour milk, buttermilk or fresh milk with a bit of cream
- 1 teaspoon baking powder
- 1 egg
- 1 teaspoon bread soda
- 100g roasted nuts (if you want)
- 100g porridge flakes (if you want)
- 50g sesame seeds (if you want)
Prepare your bread tins, brush with oil and line with grease proof paper
Then the hard bit, mix all the dry ingredients, then mix all the wet ingredients
Pour your wet ingredients into your dry ingredients and mix lightly. Do not over mix
Pour the mix, which is kind of wet, into the bread tins. We sprinkle some oat flakes on top, because that's the way Mamo made it
Bake in the oven at 170 degrees for 35-40 minutes and then turn out onto a wire rack to cool. Once cool, wrap in cling film until serving
