How To Make Banana Bread

There really is something special about fresh flavoured bread and putting fruit or vegetables into bread changes everything. We came up with this recipe and have done over 20 variations using the same basic mix and adding different fruit or flavorings. This recipe is my kids favorite. Chef Tip: Like I said we use this recipe to make other flavour breads, leave out the bananas and add: Grated carrot and walnuts grated courgette and apple Banana and dark chocolate Pear and blue cheese Orange , cinnamon and white chocolate

4-5 per loaf

Ingredients

  • - 3 eggs

  • - 1 cup olive oil

  • - 1 teaspoons cinnamon

  • - 454g self-raising flour

  • - 220g caster sugar

  • - 4 very ripe bananas (mashed up)

  • - 2 cups chopped walnuts

  • - 3 teaspoons vanilla essence

  • - 1 teaspoon bread soda

Directions

  1. Mix all the dry ingredients

  2. Mix all the wet ingredients, including the banana

  3. Add the wet into the dry and mix carefully. Do not over mix

  4. Put the dough into grease proof paper lined bread tins stick a cocktail or skewer into the middle of the cake , it should come out clean, this means its ready

  5. Put into a hot oven at 170 degrees for 45 minutes (Chef Tip: Use a cocktail or skewer to check the middle of the cake. It should come out clean - this means its ready)

  6. Once baked, turn out onto a wire rack to cool. When cool, wrap carefully in cling film if not using straight away
